The Perfect Breakfast
I am one of those “weird” people who actually like eating oatmeal. I eat it for breakfast almost everyday, but sometimes it can get really boring. I mean, who wants to eat the same thing over and over again right?
The key for me is to switch it up every so often and my new favorite recipe is Perfect Oatmeal by celebrity chef, Tyler Florence.
Ingredients: Serves 4
Oatmeal:
1 cup quick-cook oatmeal, Rolled
Oats2 cups unsweetened apple juice
¼ tsp. cinnamon
1 Tbsp. unsalted butter (I skip this ingredient because I’m not a fan of butter)
Toppings:
½ cup applesauce (or fresh apple puree)
1 cup fresh blueberries (or fruit of choice)
1 large banana, sliced
½ cup shredded toasted coconut
Skim Milk (I’m lactose intolerant so I skip this ingredient as well)
Method:
Begin by cooking the oatmeal in apple juice. Pour oatmeal and apple sauce into the pot and set over medium heat. Cook for approximately eight minutes before adding the cinnamon and butter. Prepare toppings and serve with oatmeal.
Trust me. It is sooooo yummy!
